Baked Veggie Treats

veggie treatsThis time of year, sticky sweet snacks are everywhere. Here is a healthy and tasty option to tempt little hands.

1 cup cooked, mashed sweet potato

¼ cup cooked pureed spinach

1 egg

2 tbs milk

1 cup crushed whole wheat bread crumbs

Mix sweet potato, spinach, egg and milk
Form mixture into balls
Roll balls in crushed bread crumbs and place on cookie sheet
Bake until egg is thoroughly cooked.
