Banana Flax Cookies

Banana Flax CookiesBanana and flax seed make a great tasting, nourishing treat!

2 large bananas

1 stick butter, softened

3/4 cup unrefined sugar

1 teaspoon vanilla

1 egg, beaten

1 cup teff flour

1 1/4 cups unbleached white flour

1 teaspoon salt

1 teaspoon baking soda

1/2 cup flax seed

Beat the bananas until smooth. Beat in the softened butter. Mix in the sugar, egg and vanilla and set aside.

In a separate bowl, sift the teff flour, white flour, salt and baking soda. Add the dry ingredients to the wet ones and stir in the flax seeds.

Drop by teaspoonfuls onto an ungreased sheet and bake at 350 degrees for 10 minutes.
