Cold Cucumber Soup

cucumber soup

2 tablespoons butter

¼ cup chopped onion or leek

2 cups unpeeled, chopped cucumber

Watercress leaves (optional)

½ cup diced raw potato

2 cups chicken or vegetable broth

2 sprigs parsley

½ teaspoon salt

Ground pepper to taste

¼ teaspoon dry mustard

Chopped chives

1 cup sour cream or heavy cream

Melt butter. Cook the onions until transparent. Add all ingredients except cream to onions. Simmer 15 minutes or until potatoes are tender then puree in blender. Chill. Add cream and blend right before serving.

Garnish with chives.
