This nice side relish is a great accompaniment for a variety of dishes.
1/2 medium cucumber, peeled, seeded, and diced
1 serrano or jalapeno chile, minced
1 scallion, minced
1/4 white onion, diced
1/4 cup chopped cilantro
1 tablespoon lime juice
1 tablespoon brown rice vinegar
1 teaspoon sea salt
2 tablespoons sugar
Place all ingredients in a bowl. Gently stir until salt and sugar have dissolved. Allow mixture to marinate at least 20 minutes. Can be made in advance and stored in a sealed container in the refrigerator.
