- 1 12 oz bag frozen peas, thawed and drained
- 1/2 cup dried cranberries
- 1 small scallion, chopped
- 1/2 cup walnut peices
- 2 T mayonaise
- 1 T sugar
- 2T white balsamic vinegar
- Combine first four items in a large bowl.
- Mix mayo, sugar, and vinegar in a small bowl to make a dressing, then pour over the salad.
- Serves 2 for lunch or 6 as a side dish or 8 in a buffet with lots of other salads
