Easy Pea Salad

  • 1 12 oz bag frozen peas, thawed and drained
  • 1/2 cup dried cranberries
  • 1 small scallion, chopped
  • 1/2 cup walnut peices
  • 2 T mayonaise
  • 1 T sugar
  • 2T white balsamic vinegar



  • Combine first four items in a large bowl.
  • Mix mayo, sugar, and vinegar in a small bowl to make a dressing, then pour over the salad.
  • Serves 2 for lunch or 6 as a side dish or 8 in a buffet with lots of other salads :)

  1. I tried this recipe last night and it was really tasty! I didn’t have white balsamic so I had to use dark, but the mix of tastes and textures in this super simple salad is just wonderful. I will definitely be making it again. Thanks for sharing!
