Fried Polenta with Salsa

Fried PolentaPolenta is so versatile that you can add it to meals often. This recipe is for fried polenta, but it can also be served creamy.

2 cups polenta

2 cups water or milk

1/2 teaspoon salt

1-2 tablespoons butter

1/4 cup grated jack cheese

1 tablespoon salsa

salt and pepper to taste

Combine polenta and liquid in pot and bring to boil. Add salt. Turn heat down to simmer and stir constantly until thickened. Remove from stove and pour into small greased baking dish. Let cool. Cover and refrigerate. Cut firm polenta into strips about 1 inch wide and 3 inches long. Melt butter in skillet and fry polenta on both sides until crisp. Remove from pan. Sprinkle grated cheese on top and serve with salsa. Add salt and pepper to taste.

Serves 4.
