Healthy Hamburger Skillet — Kid Approved

Hamburger Skillet

 

Providing your family healthy real-food meals may be an endless job, but it doesn’t have to be an expensive or time consuming one. This recipe was my reaction to the idea that “convenience” foods come pre-packaged or canned. It’s a healthy and delicious one-pan recipe that comes together in under half an hour.

 

This is one of my kids’ favorite recipes and we make variations of it at least once a week. Its simplicity makes it appealing to moms and its fun colors and textures make it appealing to kids. The vegetables in place of noodles add some extra nutrition and color and the spices give it a taste reminiscent of pasta.

 

Serves: 4-6 people              Prep Time: 10 Minutes      Cook Time: 15-20 Minutes

 

What You Need:

 

    • 1 pound Ground Beef  or other ground meat (grass-fed, organic preferred)

 

    • 2 Red or Yellow Onions

 

    • 4 medium Zucchini

 

    • 2 tablespoons of Coconut Oil or other cooking oil

 

    • 1 teaspoon Garlic Powder

 

    • 1 teaspoon Basil Leaf

 

    • Optional Spices to taste: Oregano, Thyme, Onion Powder (I used 1/2 tsp of each)

 

Topping Ideas: 2 cups Pasta Sauce for a spaghetti like taste or sprinkle with Parmesan Cheese

 

What to Do: Heat the coconut oil or other cooking oil in a large skillet over medium high heat. Thinly slice onions and add to skillet.

 

Very thinly slice or julienne the zucchini into noodle like slices. If you have a food processor that does this, it saves a lot of time, or you can also use a vegetable peeler and peel “noodles” by hand. For picky eaters, peel first so they don’t notice the green. Add to skillet.

 

Cook, stirring often, for 4-6 minutes or until vegetables are starting to become tender. Add half of the spices to vegetables while cooking. Remove vegetables and set aside. Optional Step: Place vegetables on a baking sheet and place under the broiler in the oven for 5-8 minutes to crisp and caramelize.

 

Brown the ground beef in the pan with the rest of the spices until well cooked. Return the vegetables to the pan and stir to incorporate. Add pasta sauce, if using and stir until heated. Serve with desired toppings and salad on the side. Enjoy!
