Molasses Ginger Cookies

molasses ginger cookiesSnappy ginger spiced cookies are the perfect foil to french vanilla ice cream.

3/4 cup shortening

1 cup sugar

1/4 cup molasses

1 egg

2 cup all-purpose flour

2 tsp baking soda

1/2 teaspoon salt

1 tablespoon ground ginger

1 tablespoon cinnamon

Preheat oven to 350. Mix shortening and sugar until fluffy. Add molasses and egg and beat well.

In a small bowl, combine flour, baking soda, salt and spices. Gradually add to shortening mixture. Mix well.

Shape dough into 1-inch balls and roll in sugar. Place 2 inches apart on ungreased cookie sheet. Bake 12 minutes. Place cookies on wire racks to cool.

Makes 48 cookies
