Spinach Salad

spinach saladFreshly dressed, this buffed-out salad can serve as a main dish.

2/3 cup olive or salad oil

1/3 cup white vinegar

1 tablespoon celery salt

2 to 3 tablespoons prepared mustard (to taste)

1 small onion, finely chopped

2 hard boiled eggs, chopped

5 slices cooked bacon, crumbled

1 large bag of tender baby spinach leaves (washed and dried)

Combine first five ingredients in blender, blend for a minute. Taste and add more mustard if desired (can also sweeten with a bit of agave nectar or sugar). Pour over spinach and mix. Garnish with eggs and bacon.
