Sunday Coffee Cake

coffee cakeHere’s a delightful coffee cake! The aroma of cinnamon, cardamom, and honey is warming, inviting, and sure to draw your entire family together.

2 cups flour of your choice

2 teaspoons double acting baking powder

1/2 teaspoon salt

1/2 cup butter

1 egg

milk

1 teaspoon vanilla

1/2 cup honey

Topping:

1/4 cup butter

1/4 cup honey

1/2 teaspoon cinnamon

1/2 teaspoon cardamom

Preheat oven to 350 degrees.

Mix the dry ingredients together. Cut in butter with pastry blender or two knives. Drop an egg into a glass measuring cup. Add milk to egg in measuring cup to a level of 1 cup. Add vanilla to the liquid and mix well.

Add this mixture of egg, milk and vanilla to dry ingredients. Also add honey to dry ingredients. Mix well. Mixture will be thick. Pour into buttered pie pan or small, square cake or loaf pan.

Make topping by combining honey and butter in a small pan on the stove. Sprinkle in cinnamon and cardamom. Add more spices if you like. Pour topping mixture over the coffee cake in the pan, in a swirl pattern.

Bake for 25 to 30 minutes. Serve with butter or your favorite spread.
