A delightfully good, sunflower-seeds-are-good-for-you cookie that your family will declare a favorite!
1 cup butter or substitute
1 cup brown sugar
1/4 to 1 cup sugar, depending on your taste preference
1 teaspoon vanilla
1 1/2 cups flour
3/4 teaspoon salt
1 teaspoon baking soda
3 cups quick oats
1 cup sunflower seeds
Cream together butter, brown sugar and sugar. Add eggs and vanilla to creamed butter and sugars, and beat. Combine with flour, baking soda and oats, and mix thoroughly. Stir in sunflower seeds. Form into a long roll about 1 1/2″ in diameter. Wrap in foil and chill. Cut into 1/4″ rounds and bake at 350 degrees on non-greased cookie sheet for approximately 10 minutes or till done.
