Sweet Spot Potato Soup

Sweet Potato SoupSweet potatoes are loaded with all the right stuff: vitamins A and C and carbohydrates. Serve this creamy, autumn-orange soup with coleslaw and grilled chicken or fish. Wheat-free, dairy-free.

1 tablespoon olive oil

1 onion, chopped

1 teaspoon cumin

1 teaspoon coriander

pinch cayenne

1 teaspoon salt

2 pounds sweet potatoes

4 cups chicken broth

2 tablespoons parsley or cilantro, chopped

Heat olive oil in a 4-quart soup pot. Add chopped onion and saute until soft. Add spices and salt. Peel sweet potatoes and cut into chunks. Add sweet potatoes and broth to onions. Bring to boil. Reduce heat, cover, and let simmer for about 30 minutes, until potatoes are fork-tender. Blend soup in small batches in electric blender until smooth. Transfer blended soup to another pot or serving bowl. Garnish with parsley or cilantro and serve.

Makes about 8 cups
