Vegetable Pie

2 tbsp butter

2 c slices mushrooms (I used cremini)

2 c chopped zucchini

1 c chopped yellow onion

1/2 c chopped green bell pepper (I used shredded carrots instead, cause my mom has fibromyaliga, and nightshade plants make her hurt… and I think I like it better with carrots anyway.)

1 clove minced garlic

2 tbsp chopped fresh parsley

4 large eggs

2 c cottage cheese

2 c grated Monterey Jack cheese

12 oz chopped fresh spinach or 10 oz chopped frozen squeezed dry (I used frozen)

1/4 tsp dried dill

1/2 tsp salt

freshly ground pepper to taste

freshly grated Parmesan cheese for topping

Preheat oven to 350 degrees. In a large skillet over med heat melt butter. Add veggies and parsley and sauté till tender, about 5 mins. Place in a 10 in quiche dish coated with cooking oil. In a medium bowl, mix eggs, cottage cheese, Monterey jack, spinach, dill, salt, and pepper. Spread mixture over veggies. Sprinkle with Parmesan cheese. Bake until firm and bubbly, about 40 mins. Cut into wedges to serve.
