Cranberry Date Bars
These easy, vegan bars are perfect for hiking or camping!

1 quart water

16 peppercorns

16 cardamom pods

12 whole cloves

6 slices fresh gingerroot

6-7 small cinnamon sticks

1/2 cup honey

1/2 cup milk or alternative

Combine water and spices in small saucepan. Boil at medium heat for about 20 minutes. Add honey and milk. Serve.

Serves 2.

1 cup pineapple-coconut juice

1 banana, sliced and frozen

2 to 3 kale leaves

2 teaspoons nutritional yeast flakes

Place ingredients in blender and puree until smooth.

Makes 1 to 2 servings

Note: 1/2 cup pineapple juice and 1/2 cup light coconut milk can be substituted for pineapple/coconut juice.

1 can pumpkin puree

4 cups vanilla rice milk

1 cup vanilla flavored rice milk ice cream

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Combine the pumpkin, rice milk, rice milk ice cream, cinnamon, and nutmeg in a blender, and blend until smooth. Add additional milk for a thinner consistency.
