
This creamy dessert is full of beta carotene. The wheat-free crust provides omega-3 fatty acids and fiber.
This spicy, hearty soup is a southwest favorite.

Cut tortillas into triangles and fry in oil until brown on both sides.
Drain on paper towels.
Simmer broth and onion until onion is tender.
Add tomato puree and simmer 5 minutes.
Add cilantro.
Put tortilla chips in bottom of warmed soup dishes, and sprinkle on cheese.
Pour on hot broth and add chipotles to taste.
This traditional Russian dish may be served hot or cold, and is often topped with sour cream.

Into 4 quarts of water Add
stew meat (optional)
onions,
celery
sliced beets
cabbage
bay leaf
salt
Simmer for 2 hours
After simmering add
grated beets
tomato paste
vinegar
honey
Simmer for another 20 minutes.
Add salt and pepper to taste.
Serve each bowl with a dollop of sour cream (optional).
