Here's a simple, hearty salad from my college days. Serve it with rice and veggies.
1 finely sliced red onion
2-4 eggs, hard-boiled
1/4-1/2 pound green beans
mixed salad greens of your choice
1-2 ripe tomatoes, cut into wedges
1/2 cup walnuts
Thousand Island Dressing Ingredients:
1/2 cup mayonnaise or vegenaise
1/4-1/3 cup chile sauce (or spicy ketchup)
1-3 tablespoons sweet relish or India relish
1 tablespoon apple cider vinegar (optional)
salt and pepper to taste
Marinate red onion in rice vinegar to cover. Let set a couple of days in refrigerator. Refrigerate hard-boiled eggs. Steam green beans until just tender. Set aside to cool. Wash greens and set in colander in sink to air dry. Combine dressing ingredients and mix well. Drain marinated red onion, and combine with eggs, green beans, salad greens, tomatoes, and walnuts. Toss with dressing.
