The "New Traditional" Spanish Rice

You can find Kris on Twitter, Facebook and writing occasionally at her blog. Spanish rice holds a lot of memories from my childhood. It was a staple at family gatherings, along with the deliciously greasy chorizo sausage. It was a dish my full-blooded Spanish grandmother and great-grandmother made and had many variants. Sometimes it would just be chicken breasts with saffron rice, sometimes chorizo was added, but no matter how it was made, it was always delicious. I can vividly recall my great-grandmother cooking in her kitchen, the smell of chicken... read more

Delicious, healthy spinach artichoke dip

Greetings, mamas. There’s nothing I love more than gooey, delicious spinach artichoke dip. Last night, I decided to re-do the recipe without the cosmic crap-ton of greasy cheese and butter. The ingredients are so yummy, why not let them stand on their own? I used beans as the binding agent, instead of cheese. 1 can cannellini beans 1 can artichoke hearts 2 cups spinach 2 tablespoons shredded parmesan cheese 1/3 cup broth 1-2 cloves chopped garlic fresh basil to taste (I used 2 cubes frozen minced basil from Trader... read more

Kitchen, what kitchen?

  • by AdinaL administrator

For the Jan-Feb Peggy’s Kitchen shoot, I knew I wanted a sunny kitchen—with a cheery view of winter out the window. Asking friends and staff for location suggestions, I came up blank. Everybody’s got dark kitchens, it seems. So this morning, Mel (staff photographer Melyssa Holik) came over to my house and we set up the shoot in my son’s bedroom. Which cracks me up. Not exactly studio material, I mean. And definitely NOT a kitchen. But believe it or not, I think it actually worked. By the time Mel arrived, I had swiped some cinderblocks from my... read more

listen up, kids: here's what we're gonna do

So, the other day, Mel (staff photographer Melyssa Holik) and I were just hanging around, shooting the breeze, sprawled out on the bouncy balls we use for desk chairs and stretching breaks, staring up at the ceiling and asking each other those age old questions: “What do you want to do?” “I don’t know. . . . what do you want to do?” “I don’t know; what do you want to do?” . . . Not really, of course. We’re still working on the March-April issue, so we’re not exactly at a loss for entertainment. But, lately when we’re avoiding work (and not playing Nerf... read more

Bloomin' Tuesday: Integrating Raw, & Sesame Noodles Recipe

I’ve been aware of the raw food option for years now, but until January, I just didn’t see how it could be a part of my life. I thought it was too intense, too restrictive, and too hard (I was sure of that). I didn’t realize that I would find it to be delicious, simple, satisfying, and easy to integrate into my life. It also eliminates cravings, and led to my decision to exercise by dancing at Nia classes 5-6x per week. One of the things that makes it do-able for me: I have the occasional cooked meal. Recently, I was in NYC, and visited my brother, who... read more

Thrifty Thursday: Pantry Meals

What are your top go-to pantry meals? (A pantry meal is something you make up out of what’s sitting around in your pantry, freezer, fridge–when you are about due to go food shopping but want to put it off for one more day–or you’re broke (me, today, actually)–or you just want to USE the food that you already have. Kind of a “love the one you’re with” philosophy, applied to food. I asked around…and here are some great leads. I hope they inspire. I always want more inspiration, so please share YOUR favorite pantry meals in a comment below. Meagan... read more

Feed Me Friday: How do you sweeten things?

It’s a new world when it comes to the concept of “sweet.” Growing up, my mother used Sugar in the Raw, and we stayed far away from Sweet ‘n’ Low. As a parent, I gravitate toward agave nectar, but have wondered about the glycemic index impact. I also like stevia in my tea, but find that it’s bitter in coffee. I love the way my son’s teacher makes birthday cakes with maple syrup and yogurt. It’s so good! Recently I’ve been experimenting with Susta. It’s a new natural sweetener that contains fructose, fiber, and even probiotics. It has a really low... read more

FEED ME Friday: Raw-some Recipes for the Whole Family

I began adding more raw meals to my daily eating practices in January, and I feel so much better as a result. It’s so much fun to experiment with familiar flavors, like pesto, in the context of a raw entree or snack. The Raw Truth: Recipes and Resources for the Living Foods Lifestyle, 2nd ed. is a fascinating, just-released cookbook by Jeremy A. Safron. Here are some tempting and delectable recipes from the book. Pesto Wraps (My son loves pesto and would definitely give these a shot. They remind me of pigs in a blanket!) Serves 4 to... read more
