Tonight we are having Tamale Pie, which is a cornmeal batter on the bottom of a pie pan. Then mix together 1 can of mexican tomatoes and 1 can (or homemade) refried beans, some garlic, cumin and chili powder for the filling. Top with more cornmeal batter and shredded cheddar cheese. Heat til bubbling. Cheap, easy to make, is vegetarian (can be vegan) and gluten free. Also freezes well.
