I also go with knitting them about as tall as the recipient is. I've also done a few with keyhole openings which are well received (and end up being way shorter, thus way quicker!).
I think the scarf is definitely enough.

I knit an entrelac scarf following Knitty's Danica pattern but used a self-striping yarn. The color changes in my yarn were not subtle, which leads me to question if this scarf should be given as a gift (to my MIL). I know my MIL will...
I can't stand having my yarn bouncing all around so I always pull from the center (or wind into a center-pull ball if necessary). I don't recall ever having a tangled mess either!
