I personally love bringing simple, humble green beans to holiday meals. Boiled in salted water for 5 minutes, tossed with a generous helping of olive oil and salt.
Oh, and then there's the carrots and turnips, another family fave. Boiled together, well drained, mashed with ample butter and salt.
