Any kind of natural, absorbant fabric--such as all the cottons you mentioned-- should let them know when they are wet. Naturally the less padded the diaper the more wet they will feel (and be)--so you might want to aim for a less...
Read a book to her while she sits on the potty chair? Or reserve some fascinating new toy just for potty time? Maybe practice with dolls or let her play on it with clothes on for a few days? Other than that, I would just say, go with...
I know you said you don't like prefolds, but I always found them great with my newborn. Pad-folding is quick and works great till they start crawling. If you plan on changing frequently you can even cut the prefolds into thirds to...
Can you sit her on the potty before the accident happens? Using timing? Suggest a favourite book, toy, snack, or reward just for sitting there a couple of minutes.

does your LO soil the diaper? I'd be surprised, how would he know what it is for if he's never used one? If so have you tried using cloth? The wet feel might put him off going in it.
can you potty first, nurse second? otherwise I would proceed with the NCSS and leave the pottying out if it's too much work to do both together, because if you could get her nursing less at night, she might not even need to pee at night.
