The whole foods you listed are much better for you than soy protein and fake meat, so I'd say you're on the right track It's also great that you have a variety of fruits and veggies to keep thing interesting. I would consider mixing up your grains a bit, just to prevent boredom. Maybe experiment with kasha, amaranth, millet, polenta -- I've found all of those tasty and easy to prepare.
Just chiming in: I the gym! I belong to the Y and try to get there 5 - 6 times a week for cardio, Pilates and toning/shaping classes. They just started a new "session" this week, which means a new round of classes. Yesterday I went twice (once in the AM, once in the PM) for three separate classes -- I wanted to check out two I'd never done before. Guess I should've spread that out a bit more because boy, am I hurting today! I'm glad you're enjoying yourself,...
