I do! I love sprouted spelt bread. Easily can be modified for muffins. It's a sweet bread, but my kids like it.
2 cups hot water
5 cups flour
1/2 cup oil
2 tsp. salt
1/2 cup honey (may use 1/4 cup)*
1/2 Tbs. lecithin (optional)
3 1/2 tsp. instant yeast
1/2 Tbs. gluten (optional)
Combine water, oil, and honey. Add 3 cups of flour, yeast, salt, lecithin, and gluten. Mix thoroughly. Add the remaining flour and knead until smooth and elastic (about 10 min.). Let rise until double. Shape into loaves or rolls, place in greased pans, and let rise again. Bake at 350o for about 30 min. Makes two 1 1/2 lb. Loaves.
I've not tried it with another sweetener (like Agave), but that might be good too. I never use lecithin but I do use gluten. Not sure how TF that is, but since spouted grains (especially spelt that I use) don't have a lot of gluten I figure the added gluten keeps it from becoming a brick.
