I'm not entirely sure, but I think you can buy freeze-dried yogurt cultures for making yogurt so I think they survive. (I hope so b/c I've been making yogurt popsicles )

I hope someone who knows more will answer...

I'm pretty sure freezing is OK, but I'm not positive. But I do know that cooking will kill them. You can cook saurkraut occasionally, for the yummy recipe, but you won't get the probiotics from it. It's best served as a condiment, unheated.

anyone else think at least freezing is ok?

I have frozen yogurt and then recultured it so at least in the short term, it doesn't kill the good bacteria. Long term may be a different story.
