Starting to make cookies and freeze for Christmas

Okay, so I thought a mindless thread would be good about now...

I don't have much of an appetite lately (which never happens to me) which may be good so I don't eat all the treats I make.:
I just started to make cookies to freeze so we could have them for Christmas. I love making all kinds of goodies for the holidays but with the baby coming I'm sure that'll be the last thing on my mind. DS has a few food allergies so buying them isn't an option, plus they wouldn't be as good.
Last night I made 3 1/2 dozen of Dark Chocolate Chip Coconut Bars. My take on the recipe of course to make them not so sweet and so that ds would enjoy them.
Today, I'll be doing another kind maybe good old chocolate chip with dried cherries. I got a big box of these wonderful dried cherries in Up State Michigan this summer and I've been saving some for just this thing. I think with these I may just roll the dough in a log and wait to slice and bake them when we're ready to eat them.
At this point I'm not sure what else I'll be making but I need to get a move on. Anyone else making Christmas treats ahead? and if so what?

Wow, you guys are so organized
I'm not usually much of a baker, but I've been thinking of making some cookies next week just to celebrate Having A Working Oven Again (it has been a long time without one.) My hypnobabies manual suggests bringing a treat (like brownies or cookies) for one's nurse if at a hospital.. now that you mention freezing (why didn't I think of freezing maybe it was my DH saying "hm, you would have to make some every day in case it was time for the baby. And then if it wasn't you would have to eat it".. he cracks me up), I might save some for that.

I typically do all of the baking for my family's Christmas Eve. This year I will not be doing that, but I can't have Christmas without Christmas cookies so I'm sure to make the very favorites. I usually make the dough ahead of time and freeze it though. It makes things so much easier when you make 6-8 different kinds.

Before I had DS I made a batch of oatmeal chocolate chip cookie dough, formed it into balls and froze them. Then I could take a few out at a time and bake them. All nursing moms need lots of oatmeal, right? What yummier way to get it than warm, fresh cookies?? I should do that again. Oh, I just remembered I think there is a recipe somewhere for cookies geared especially towards nursing moms. I need to find it!

I found the recipe!

Housepoet's Famous Lactation Boosting Oatmeal, Chocolate Chip & Flaxseed cookies ™
Ingredients :

* 1 cup butter or marg
* 1 cup sugar
* 1 cup brown sugar
* 4 tablespoons water
* 2 tablespoons flaxseed meal*
* 2 large eggs
* 1 teaspoon vanilla
* 2 cups flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 3 cups oats, thick cut if you can get them
* 1 cup or more chocolate chips
* 2 tablespoons of brewers yeast* (be generous)

Directions:

Preheat oven at 375 degrees F. Mix together 2 tablespoons of flaxseed meal and water, set aside for 3-5 minutes. Cream (beat well) margarine and sugar. Add eggs one at a time, mix well. Stir flaxseed mixture and add with vanilla to the margarine mix. Beat until blended. Sift together dry ingredients, except oats and chips. Add to margarine mixture. Stir in oats then chips. Scoop or drop onto baking sheet, preferably lined with parchment or silpat. The dough is a little crumbly, so it helps to use a scoop.

Bake 8-12 minutes, depending on size of cookies.

Serves: 6 dozen cookies

Preparation time: 15 minutes

*can be found at any local health food store.
*NOTE* IT MUST BE BREWERS YEAST, NO SUBSTITUTIONS.


I wonder if flaxseed meal is the same as ground flaxseed? I would assume it is but I'm not sure.

Yeah, it should be the same. I have a bag from Bob's Red Mill that I sneak into stuff, and it says "ground flaxseed meal" (I hear that flax seeds that aren't ground up just go right through a person and don't really do anything useful.)

I started baking last night- pumpkin bread for thanksgiving & christmas, chocolate zucchini cake for our pre thanksgiving party, muffins for the kids, and then cookie dough. I have almost all of my christmas shopping done, too, and wrapped!

I know what I have at home is the Bob's Red Mill stuff, so it must be the same as yours. Thanks!

I've tried freezing some things lately, but when I thaw them they don't taste so great. What have you guys done to make sure your treats will taste good when you take them out?

Awww! Send me some! I SO wanted to do this, and now I'm on bedrest and can't do ANYTHING. So frustrating. Baking is such a big part of Christmas for me. Trying to look at the upside, maybe I'll lose more baby weight since I won't have Christmas treats.

I make treats and vacuum seal them all the time, they taste the same defrosted as they do fresh.

Mmm, what a wonderful idea. I just don't know if I could make cookie dough without the glorious expectation of the finished product! Not to mention my freezer is very, very full.

We're doing Thanksgiving on Sunday (as in two days from now), so that's more on my mind at the moment than Christmas, but afterwards, perhaps I could make some gingerbread dough and freeze it, along with some shortbread or choc chip cookies... I also like the idea of rolling it into a log and slicing it. Why haven't I thought of that before either??

I absolutely adore baking. We should share favourite holiday baking recipes! I need to get my mom's Swedish Tea Ring recipe off of her for this Christmas. Mega yummedy yumness.
