So far I have just a little done...

Monday 1st
B- Blueberry Pancakes & Bacon
L- Leftovers
D- Homemade Pizza

Tuesday 2nd
B-Carmalized Pear Rice Pudding
L-Crockpot Quinoa Casserol
D- Veggie Coconut Curry

Wednesday 3rd
B-Cornmeal Waffles, Sausage & Citrus Salad
L- Egg Salad
D- Church

Thursday 4th
B-Cranberry/Orange Yogurt Muffins
L- Sandwiches
D-Beef Stroganoff w/egg noodles, greens, mushrooms

Friday 5th
B-Banana/Blueberry Oatmeal Pudding
L- Antipasto
D- Cuban Blackbeans & Rice, sauteed kale, sauerkraut

Saturday 6th
B- Out
L- Out
D- Crockpot Honey Ribs, Fries, broccoli, coleslaw

Sunday 7th
B- Quiche, Muffins & Fruit Salad
L- Leftovers & Marinated Cucumber Salad
D- Sausage Honey Baked Lentils, Sweet Potato coins, sauteed green beans

Monday 8th
B- Breakfast Sausage Casserol
L- Out
D- Reuben Mac-N-Cheese, Steamed Broccoli, Sauerkraut

Dinners:

12/1: Italian pasta (penne tossed with sauce and sauteed eggplants and red peppers) and a mixed greens salad w Trader Joes Goddess dressing (if you haven't tried this dressing yet, you're missing out!).

For my second dinner tonight (I work 12 hour nights, so I'll be eating again around 11pm) it'll be the mixed greens salad with cranberries, crumbled gorgonzola and a few walnuts tossed in.

12/2: Chicken cutlet parm with sweet potato fries and ice cream sundaes for dessert

12/3: I'll be pretty tired, having worked 2 nights in a row, so we'll be having scrambled eggs with cheese and maybe bacon if I'm in the mood.

12/4: Curried lentils with buttered garlic naan to soak up the sauce (mmmm).

12/5: I'm thinking garlic mashed red potatoes with buttered sweet corn and maybe a teriyaki beef of some kind.

Saturday we'll be eating out--Thai, and Sunday my boyfriend has a christmas party for the Nat'l Guard, so we'll be eating there.

Lunch is usually determined the morning of, depending on mood. I have all the supplies to offer the following choices:

~Fresh honey turkey and organic cheddar on whole wheat
~Organic apple granola with orgaic vanilla cream yogurt
~Spicy tuna salad either on WW or with pita chips
~Snack-for-Lunch (ds *loves* this--it's great for grazers), which is any combination of small portions of the following: Toasted almonds, cheese stick, baggie of grapes, ww crackers, baby bell/gouda cheese ring, carrot sticks with ranch for dipping, sliced apples with pb or yogurt for dipping, rolled up turkey and cheese, etc
~Leftovers, of course!

We're not big morning eaters, thankfully, so a small cup of yogurt or sm. bowl of organic cereal is all we usually do.

I'm trying to plan just a few days ahead instead of a week or two for now so here is what we're having for

Tonight- Baked Ziti with homemade roasted tomato sauce, sweet italian sausage and fresh mozz :
Tuesday- Shepherd's pie
Wednesday- Salmon with rice and baked squash
Thursday- Spinach bacon quiche

I'm doing a VERY easy meal plan this week. I think I am all food-ed out after Thanksgiving!

1 - Pizza (Monday Night Football craving!), Green Salad
2 - Hamburgers, homemade Sweet Potato Fries, Green Salad
3 - Chicken Tetrazzini with Peas
4 - Roast Beef & Provolone Subs (we have some thinly sliced meat and cheese we need to use up) with onions & mushrooms, Green Salad
5 - Leftovers or Breakfast for dinner if we don't have any leftovers.
6 - Refried Blackbean & Cheese Quesadillas, Guacamole
7 - Chicken Broccoli Rice Casserole (DH loves this and has been begging for it)

Sunday: L: empanadas S: leftover lasagna

2-turkey noodle soup, bread
3-quesadillas
5-hot dogs, fries, apples
6-pasta carbonara, bread, salad
7-grilled ham steak, stir fried veggies, roasted potatoes

Breakfast on weekdays is oatmeal or bagels; eggs, waffles, french toast on weekends. Lunches are leftovers, sandwiches or soup.

Oh, super easy junk food. Bake the biscuits according to the package, then cut each in half. Spread with a little pizza sauce, add toppings and cheese, then bake until hot. Or top with a little butter, garlic salt, and mozz to make cheesy bread.

I'm posting next weeks because we are on vacation until the 24th.

Wednesday 12/24: appetizers & dessert to take to my family Christmas -- french bread with olive dip, spinach, artichoke, & cheese dip with tortilla chips, and peanut butter pie

Thursday 12/25: turkey, green bean casserole, corn souffle, mashed potatoes & gravy, with red velvet cake for dessert

Friday 12/26: leftovers

Saturday 12/27: baked fish, steamed broccoli, corn on the cob

Sunday 12/28: pork chops made with rotel, worcestershire sauce, bell peppers and onions, macaroni & cheese & a vegetable casserole

Monday 12/29: shake n bake chicken, butterbeans

Tuesday 12/30: parmesan breaded chicken breast, fried green tomatoes, purple hull peas
