I'm not a fan of paperbacks. Are any of these hardcover material and not just mass produced paperback type?
Eragon, I thought it was okay. I think ELdest was a bit better. I just finished the last one and it was a bit too much running around but all in all i say it's an ok series. Add me to the group who liked Mists of Avalon.
Stephen King wrote a book Called the Talisman back in the day that I loved as a kid. Could that be the one your thinking?
I heard the Shannara Trilogy by terry Brooks was good, has anyone read it?

Neal Gaiman! My favorite is Neverwhere, with Stardust a close second. American Gods and Anansi Boys are good too.

I don't know if this counts as fantasy or not, but the first several Anita Blake books are good. They're set in a version of the contemporary US in which vampires, were-animals, demons, trolls, fairies, etc., are part of every-day life.

I get all of these in hardcover from my library, but when I go to a bookstore, they are usually only available on the shelf in paperback. Maybe you can order hardcovers online?

Little, Big
Jeff Van Der Meer's Veniss Underground stories
Jonathan Strange and Mr. Norrell is my favorite, but you've already read it.
The Anubis Gates by Tim Powers. ANd if you like that, you can try his The Stress of Her Regard -- he's a hit-and-miss author for me, but when he hits he's the most fun ever.
The Last Unicorn, Peter S. Beagle
Dark Sister, Graham Joyce (Joyce can be a little, as you might expect from the title, dark. Wonderful, though)
for just plain funny literary-spoof fantasy, you cannot do better than the Compleat Enchanter, by L. Sprague De Camp and Fletcher Pratt. Although Gaiman/Pratchett's Good Omens is pretty hilarious as well.
