Looks Delicious! Any advice on how to make it GF? I know I can just replace the flour with a GF mix but I don't know what the best mix would be and if I need to add a "gum". It would have to be guar not xanthan and I'm a newbie to GF baking so I don't know what I'm doing. I don't have guar gum - can I buy it in a reasonable amount or does it only come in big bags? Also, we can do eggs - would it be one egg instead of the flax mix? TIA!!! Oooh, also - is there a recipe anywhere for a sort of whipped cream replacement? I guess maybe it would just be a frosting but does anyone have a good idea for something to go on top of the gingerbread for an xtra treat feel?

There are a couple dairy-free whipped cream recipes at Go Dairy Free! and another couple at allergygrocer. The ones on Go Dairy Free are both soy based; one at allergy grocer uses potato milk while the other uses soy.
There's also this recipe using eggs to replace whipped cream. And here is one using coconut milk and rice or soy milk powder.
I saw somewhere else that some people just use coconut cream in a whipped cream dispenser (though then you'd have to acquire a whipped cream dispenser).

You'd probably need a gum. I haven't used any of the gums yet, but now that we can have guar gum in the Coconut Milk Ice Cream, I have to get some. As far as I know it only comes in those Bob's Red Mill size packages. 1 egg = 1 Tbs. milled flax + 3 Tbs. water, so however many eggs that comes out to. You may be able to use an extra egg to get away from the guar gum, but not sure.

On the whipped cream, I haven't tried it yet, but was wondering what happens if you whip the "fat" part on the top of a can of coconut milk, and add a little confectioner's sugar to it...
