I'm looking for a fun craft/do-it-yourself kind of kit for some sisters aged 5-8 for a Christmas gift. Any suggestions?

This book feels good in your hands. The paper is heavyweight, and the illustrations flow perfectly.

Perhaps you can just gather craft supplies and put them in a pretty bin. Most kids will come up with great stuff all on their own with good supplies,
I have a list of things here:

You could make specific themed kits:
scrapbooking
painting/drawing
sewing/embroidery
sculpting (modeling clay or polymer clay for more permanent creations)
beading/jewelry making

When I was a child my Grandma used to make me a craft box every year for Christmas. She started it early and every time she saw something on sale would grab it and throw it in the box. By December it was always full of so many neat and interesting things. I LOVED opening this box. I still get all giddy thinking about opening the box.
So I would do what above poster said and make your own! Does not have to be full of expensive items just get a shoe box and put all kinds of things in there.

Thank you for the idea, mama...I absolutely LOVE it!!! These little girls (my sister-in-law's neices, we see them once or twice a year at extended family events) are sweet, but boyohboy are they ever addicted to Bratz and junk like that!!!
I can't stand that kind of thing. I like the idea of a "themed" box to give them a little direction...they're pretty creative, but usually need a little nudge in a direction to get them started on something. I like the idea of jewellery...I think I'm going shopping for beads!!!

At that age I loved painting t-shirts. Either repurposing t-shirts I already had or painting blank ones.
I think scrapbooking is also currently popular with that age- probably digital cameras and having photo printers makes parents more willing to give their kids copies of pictures to cut up!

Wet felting kits are great for that age, though I think I would have gone nuts for the shoebox full of crafty stuff idea as a kid. I may just have to put one together for my dd this year!
