Chicken Liver?

I bought some chicken liver since it was recommended for nursing moms.

What can I do with this? Will cooking it kill the good stuff? I would love to eat and have it not taste like liver :-D

It IS liver. It's going to taste like liver!

I always broil it before sauteeing it, in accordance with Jewish law. If you don't keep kosher, you can prepare it any way you want.

After broiling, I let it cool, then cut it up and sautee it in chicken fat with onions and/or mushrooms, then usually add eggs and have a liver omelette.

Maybe I am weird but I like chicken livers just fried by themselves. I hate beef liver (I wish I didn't!!) but my sisters and I used to FIGHT over the chicken liver when my dad would make chicken

I find the chicken pate recipe in NT is REALLY tasty with shitake mushrooms. I add a wee bit of pecans to it as well and do it with a sweet vermouth. Add a bunch of salt and enjoy(really, do enjoy as it makes a ton).

Tonight, I just cooked it gently in leftover bacon fat. It was rather palatable.

I just sautee it in butter for a few minutes. I loooove it, but beef liver

Roll it in flour and gently fry in bacon grease.

While you get the most from it if you eat a fair amount of it (i.e. fried up in a pan, or as pate), if you just can't stomach that, you can hide it in your food. I did this just last night with our soup. I pureed the raw livers in the food processor, and poured it into the soup while stirring. It just disappears into the dish. I've also put it into chicken pot pie. I think the liver could be added to just about anything. Chicken liver has a very mild taste compared with beef liver. I've tried mixing beef liver into food, and the taste was very noticeable. But the chicken liver isn't at all noticeable (and believe me, ds notices everything!). Beef heart is really good for adding to food, too. It adds a richness. It's really nice.
