Christmas is coming! Here's a mulled wine recipe

Found it online and I'm about to make some


Mulled Wine

Ingredients:
One bottle (750 mL, 1.5 pints) of red wine (suggestions: Cabernet Sauvignon, Zinfandel, Merlot)
One peeled and sliced orange (keep peel to add zest to taste into cooking pot)
ÂĽ cup of brandy
8-10 cloves
2/3 cup honey or sugar
3 cinnamon sticks
1 tsp fresh or 2 tsp ground ginger (allspice can be substituted)
Serves 4-6
Preparation:
Combine all ingredients in either a large pot or a slow cooker. Gently warm the ingredients on low to medium heat (avoid boiling), for 20-25 minutes. Stir occasionally to make sure that the honey or sugar has completely dissolved. When the wine is steaming and the ingredients have been well blended it is ready to serve. Ladle into mugs (leave seasonings behind) and enjoy!

Negus - Victorian Mulled Wine for the Kids
In Victorian England, children were served small glasses of wine at the dinner table, and had it in punch at their parties. Here is a recipe for Negus - a Victorian mulled wine - intended for a child's birthday party. It's from Mrs. Beeton's Book of Household Management from 1861.

1 pint port wine
1 quart water
1/4 lb sugar
1 lemon
grated nutmeg to taste

"As this beverage is more usually drunk at children's parties than at any other, the wine need not be very old or expensive for the purpose, a new fruity wine answering very well for it. Put the wine into a jug, rub some lumps of sugar (equal to 1/4 lb.) on the lemon-rind until all the yellow part of the skin is absorbed, then squeeze the juice, and strain it. Add the sugar and lemon-juice to the port wine, with the grated nutmeg; pour over it the boiling water, cover the jug, and, when the beverage has cooled a little, it will be fit for use. Negus may also be made of sherry, or any other sweet white wine, but is more usually made of port than of any other beverage. "

"Allow 1 pint of wine, with the other ingredients in proportion, for a party of 9 or 10 children."

Thanks for posting this! I love reading old recipes. I recently checked out a biography on Mrs. Beeton.

I can't imagine even 10 kids sharing a pint of port, when a small wineglass is enough to make me want to take a nap!:yawning: How times have changed.

Yeah, I bet those Victorians had no trouble getting their kids to fall asleep at night. "Here son, have a nightcap."

The short Life and Long Times of Mrs. Beeton by Kathryn Hughes. An interesting read for any nerdy domestic history buff...but kind of sad too.
