I woul use the sheep pattern for the goat and just make the body narrower. Maybe use the small or medium pattern and cast off a couple more stitches when making the legs. And maybe make the head narrower. Look at the diagrams instead of reading the print pattern.
The basic cat pattern could be a dog, but make it bigger, which is just basically a bigger rectangle. Or use the pig body. And make the head longer by knitting a longer rectangle and add different ears. Here is a
picture from ravelry. I think alot of the animal comes from color choice and how you stitch it together. And imagination of course!
These little critters are so quick that you could experiment a little without being out too much time if they don't turn out right.
