Thanks! Yes...we got home the day before Christmas and we went Tuesday back for a checkup....she got a clean bill of health. Scary time having a day day old with pneumonia...but great to have that freezer stash of food. I didn't have to worry about what the rest of the family was eating at home. I feel more now than ever that keeping that freezer stocked and a good meal plan ready....for emergencies is essential.

subbing! One of my goals for 2009 is to get better at meal planning. I'm doing good so far. Got a refrigerator pad that I can jot down lunches for me and dinners. I'm doing good so far. I figured out that I forget what I planned. I have some kind of aversion to writing it down. My mother never did that, but she was not a stellar cook or housekeeper. It's taken me a long time to figure out it was OK to write it down. It's totally helpful for me to see what you guys plan, too.

I have to change my meal plan. Well, not change, but, I guess just get rid of a couple of days...we have way too many leftovers (ham, chili, shredded BBQ chicken), due to DH's work (he just stayed at work last night, had to go across state today, and they just issued a "no travel" directive b/c of weather, so, he's staying overnight at his destination tonight).

I already had the brisket cooking, and, really, it was defrosted, so, it needed to be cooked regardless, but I'm getting rid of the pasta w/PB sauce and the pierogies.. Those were utilizing mostly pantry/frozen items anyway....I'm working tomorrow and Thursday (my boss told me not to come in today b/c of the predicted horrible freezing rain), but, I'll bring at least my lunch, and maybe DDs, those days. I nanny, so, we usually eat my boss' food - but, I can't see wasting perfectly good food. Plus, my stuff is usually healthier... :

I don't want to plan through the rest of the month yet, b/c I'm not sure what will be hanging around on the 20th...it may just be a few days of re-dressed leftovers and a couple pantry/freezer meals. It'd be great if I don't have to do shopping other than dairy/produce...we'll see.

We're back to just keeping our fridge, freezer, and pantry well stocked rather than actual meal planning. Right now we have close to 60 pounds of venison (sausage, tenderloins, and deerburger) in our freezer, so we're doing a LOT of deer chili and deer steaks!
I made a big decision about meal planning the other day. I'm not planning lunches anymore. My DH works from home and has for a few years. For those years, I planned all the lunches and dinners. But I decided it was too much and I didn't want to do it anymore. I asked DH and DD what kinds of things they wanted on hand for lunches and added those to the grocery list.

And this week, I'm trying something different...something I've seen other moms here do. I wrote down five meals and posted them on the fridge. DH went shopping (yah!) and got all the ingredients for those meals and all our lunch stuff. Now, we just pick what we want for the night.

So here are the five meals:

1. baked chicken, lemony couscous with chickpeas, large green salad with avocado and strawberries

2. curried cauliflower and chickpea soup, spinach cheese burritos, fruit salad

3.pork chops marinated in soy sauce and ginger, pineapple slices, udon noodles with green onions, miso-glazed eggplant (we had this last night. GOD the eggplant was good!!!)

4. creamy lemon pasta with nuts and parsley, baby greens and pecans and pears, crusty bread (tomato and basil topping for me)

5. lentil soup, corncakes, broccoli salad (with tomatoes for me)

And then one more cuz I realized I needed to use up some stuff:

6. tortellini carrot and bok choy soup with turkey, toasted broccoli cheese melt, apple slices
