I've never posted to the Meal Plan threads but I always look to them for inspiration when doing mine. I made the leap today from planning two weeks at a time to a whole month, It only ended up being a couple more items on my list!: Im saving so much money by doing it that way..I had no idea. Im going to use the money I saved to buy some birth supply type things...ooooo or maybe a new wheat grinder.

I repeat some favorites that are cheap and my family would literally eat everyday, I am trying to keep our grocery costs down as low as they can possibly go. So I used Supercook.com and justbeanrecipes.com (Because I have alot of beans ) to do a sort of "pantry challenge" and see how far I could stretch what I already have. This is what I came up with:

I can only do one week at a time,but trying for a 2 week plan.

Sun: Stirfry,rice/soba noodle. Maybe crab ragoons?
Mon: Ham,potato,carrots,homemade bread.
tues: Taco salad,yellow rice,black beans.
Wed: Shepards pie or enchaladas ,(beef or chicken).
Thurs: Leftovers
Fri: Homemade pizza
Sat:?????



I plan to make the shepards pie and enchalads on Sunday so I can just pop them in the oven when they want them.

Well, I made most of the meal plan meals even though they got moved around due to a crazy busy week; need to move the chickpea pasta down on the "when to make" list. And we had a guest on Tuesday and another tonight. So the plan now is:

Sunday 1/18 Apple-walnut salad; sweet potato risotto; pound cake (from the freezer) with cherry (DD decided she didn't like them, so we have lots left) compote. :

Monday 1/19 White bean and avocado sandwiches
Tuesday 1/20 Barley soup
Wednesday 1/21 Eat out
Thursday 1/22 Chickpea pasta
Friday 1/23 Fajita wraps
Saturday 1/24 Quick Curry
Sunday 1/25 Vegetarian Baked beans

I have never posted on this thread before as I was struggling with meal planning...this is my second week of actually planning the whole week...it is so exciting...

Monday: Crock pot chicken, potatoes, carrots
Tuesday: Pasta primavera with shrimp
Wednesday: Hot dogs and beans with salad
Thursday: Lentil stew with fresh bread
Friday: Take out

I am stuck in a rut, and I keep making the same thing over and over. Winter is sucky. I get stuck on soups to keep us warm. I have been trying to make rice dishes, but it is way to carb-y for me, and we don't even like them that much. I am looking for a couple new and frugal recipes to try out with the food in my pantry.

That said, here is what I am making for the rest of the month:

19- L: chicken nuggets S: homemade pizza
20- L: vegan chili S: baked spaghetti and french bread
21- L: salad S: chicken enchiladas
22- L: leftover chili S: texas caviar and chips
23- L: black bean enchiladas S: veggie stir fry
24- L: leftover veggie stir fry S: minestrone
25- L: empanadas S: leftover minestrone
26- L: navy bean soup S: chicken quesidillas
27- L: biscuit pizzas S: pasta and peas
28- L: blackeyed peas and tortillas S: pancakes
29- L: homemade mac-n-cheese S: tacos
30- L: chicken nuggets S: sausage pizza
31- L: waffles S: mexican pasta

Friday- Barbecue Chicken & Cornbread (DP's request), Ice cream sundaes for dessert with homemade whipped cream
Saturday- Barbecue Chicken Sandwiches (shredded leftover bbq chicken and leftover hamburger buns that I froze) green beans for DP, Spinach for me

So, ive decided that meal planning for an entire month is a little too overwhelming for me, lol. Maybe it was because this month was so scattered (we were supposed to be out of town for the last week, but stayed home instead), but i think I will stick to 10 to 14 days meal planning and see how that goes.

I haven't posted here, but I've been pretty good about meal planning.

I have a notepad that sticks on the fridge and it has breakfast, lunch and dinner for each day of the week and an extra blank line. I can scratch things out and change them around easily enough. And if something is good, I pencil it in for the week after next.

This week:
Sunday - roast chicken pieces in lemon, olive oil and herbs with roasted potatoes and red pepper. It's a pampered chef recipe from the discontinued stoneware book.

Monday - was supposed to be keilbasa and cabbage soup but DH used the cabbage on Saturday. DH cooked steak, green beans and rice.

Tuesday: Crockpot curried chicken from "mealmakers" type place. I may change this since the schools are home and it looks like I'll be home.

Wednesday: meatloaf (I may cook that today).

Thursday - eat out or leftover night.

Friday - tacos.

Saturday - DH cooks.

I'm also pencilling in my lunches so I remember what leftovers we have to eat.

I even took a few minutes at a boring meeting to plan some meals this week. I can't believe what a difference it makes to actually write things down! It takes very little time - and makes a huge difference.

For me, it helped a lot to go "less formal" with the planning. I had downloaded some sheets that allowed for recipes and shopping lists but then I felt like I needed to find an hour to go through and do it all. The notepad on the fridge means I can write it whenever I walk on by.

Oh my goodness. You guys rock! I came to this thread b/c I want to start meal planning! Where do you all get your recipes from and how do you coordinate what to have each week...like according to ingredients that match up or leftovers from one meal going into another?
