I have never seen a sprouted gluten-free bread. My guess would be it has gluten grains that have been sprouted, but that still contains wheat, etc. Sprouted or not, it is still wheat, rye, whatever. I would just check the label.
I honestly can't imgaine how they could make a bread that would be palatable and sell with only sprouted flax seeds. Look at this one for example. The name only says flax seed bread, but it has way more than flax seed in it, and it is definitely not gluten free. I can't imagine either, hence my disclaimer (of sorts). However, stranger things have been known to happen.
check out the foodforlife.com website. the ezekial breads are far from gluten free. sorry. there are GF options from the same company but not the one you were referencing. just because something doesn't have "flour" doesn't mean it's GF. there are 4-5 gluten grains (hmmm....wheat, rye, barley... what am I missing??) and many other hidden ingredients that have gluten in them as well.
Yeah, ditto. The Ezekial bread does not have flour because they have sprouted the grains first. Grains are very hard for anyone to digest. Soaking, fermenting, sprouting, etc, breaks down the phytic acid, adds enzymes, and makes them better for your body, more assimilable, keeps them from binding with nutrients and minerals, etc. But, that does not make the end product gluten free. They are definitely not gluten free. Sorry!
