GFCFEF Cornbread recipe anyone? (also baked bean advice)

Does anyone have a good one they're willing to share? (I haven't had a chance to check Kathy's site, is there one there? )
I'm making... or about to try to make... baked beans. I made them once before and DH (whose whole family is from Boston- he moved when he was 7) said they were good but... I thought they were dry even though I kept adding more liquid. Any tips on how to keep them "saucy"?

What ingredients are in the beans?

I googled "gluten free vegan corn bread" and got a bunch of hits, some from the tried and true sites like Karina's kitchen.

I just made some millet muffins from Kathy's site and they are very similar to corn muffins. AND dd actually likes them!

Well... you know I kind of wing things, right?
I looked up several recipes and this is what I think I'm going to be doing:

1 lb small white beans (soaked then boiled in ham broth)
1 c diced (fatty) ham
1/2 c molasses
1 t dry mustard
1 onion, finely diced
1/2 c brown sugar
1 t pepper
1 1/2 t salt
1 c "ham broth"
1 T tomato paste +1T water +1T vinegar +1t sugar

Then adding ham broth as needed. If that doesn't work out as I hope it does, I'll tweak it the next time I make it. It's similar to what I did last time, but I can't find the book in which I wrote exactly what I *did* do last time, so...

I'll definitely go check out Karina's kitchen, thanks!


ETA: Ended up using 2c fatty ham, 1/2 t dry mustard and leaving out the tomato paste mixture. We'll see how it turns out.

I would definitely second Karina's kitchen. She has several gfcfef cornbreads.

I ended up trying this recipe from Vegan Feast, which turned out okay if a little crumbly (I actually followed the recipe word for word for once! ).
The beans turned out okay, but a little too salty, imo. Looking at what I had wrote and what I did, I realize I added an extra 1/2 tsp salt while making it. Also, in the future, I will cook the beans 1/2 hour longer (1 1/2 hours total) *before* I put them in the crockpot with the saucy stuff- I think that will take care of the dryness issue I'm having and decrease my crockpot time (which is about 4 hours).
DH, of course, declared it all "really good"- but he's really not picky, to say the least. DS1 didn't have 2nds, which tells me all I need to know- needs improvement.

I have one baked bean recipe that DS loves (he and DH are the only ones who like baked beans anyway) but now you're making me want to try corn muffins again.... I just ordered guar gum and I'm waiting to experiment.

I'd try my hand at cornbread but after my horrid experiences with all things bread at the beginning of this adventure, I'm still scared.
