TF Baked Oatmeal

We love baked oatmeal, and so I revamped a recipe to fit TF.
It turned out better than the standard sugary recipe.

4 cups rolled oats
1 1/2 to 2 cups kefir
Mix and soak overnight
In the morning add-
3/4 cups of honey
2 tsp cinnamon
2 1/2 ts baking powder
3 eggs
3/4 cup of melted butter
2 tsp. vanilla
3/4 cup lowbush cranberries (lingonberries)

Mix and pour into a 9by12 pan and bake for approx 40 minutes.
Serve hot with raw milk.

Yum! I do mine almost the same. I use buttermilk or watered yogurt instead of kefir and coconut oil instead of butter. I also add some mashed banana as part of the sweetner - very tasty!
I tend to serve mine as a cake rather than with milk. Do you break it up like a cereal in the milk? Sounds yummy! :

Do you think that coarsely ground oats work for this recipe? I can only grind my oats, not roll them. Thanks!

I made a version of this for breakfast this morn and it was quite sweet even with no sugar/honey/maple syrup:

(all amounts estimated/ adjusted to taste)

3 cups oats
1/2 cup dried fruit (raisins and sultanas)
1tsp cinnamon
3/4 tsp nutmeg
1 chopped apple
3 cups coconut milk
1 tbsp kefir

soak oats in kefir. coconut milk
add all other ingredients

bake 325 f about 40 minutes

this was so much tastier then out usual stove-top porridge, will make it a regular thing.

Your refering to steel cut oats, right?
You will likely want to soak them in water first for a few hours, and then the kefir overnight.
In case you are interested, The Family Grain Mill (Bosch) sells a roller/flaker for quite cheap. Its dual power as well. We flake ours by hand using it.

I don't mean to hijack the thread but could someone please tell me if when cooking with kefir or yogurt, do the benefits still remain or are they cooked out??

Most of it is cooked out. The only reason for using it in the first place, is because it is the best neutrilizer for the grain. You can use water and lemon juice, but the taste and texture is just not the same.

You can use any oats for this. They give different textures to the dish but are all lovely. Ground oats give more of a cakey effect, whereas rolled oats tend to form a crust on top of a custardy base. All good! :

This was awesome, we ate it this morning and my kids said it was like a breakfast cake : I kinda combined the two recipes listed here and this is what I came up with:

3 cups rolled oats
2 cups Kefir

Mix and soak overnight.
In the morning add:

2 cups coconut milk
2 eggs
2 tsp baking powder
1 1/2 tsp cinnamon
3/4 tsp nutmeg
3/4 cup raisins
1 tsp vanilla
1/2 cup honey (more or less to your taste)


325 degrees for 40 minutes.

We added a generous pat of butter, milk, and a little sugar on top. It was yummy, even my picky eater ate most of hers

We call it breakfast cake here! Thier teachers probably think I'm feeding them such rubbish - 'I had cake for breakfast this morning miss!'
Adding coconut milk - inspired idea! I'll be trying that next time for sure!
