I don't usually come on this forum, but I think it's the place to ask:

I usually make bread by soaking five cups of WW flour in the water for 8 or so hours then add the rest of the flour, knead, rise, bake.

A friend just discovered a delicious bread recipe that involves having the dough rise in the fridge overnight. If I make the dough and let it rise in the fridge, does this count as soaking, or am I loosing the benefits of the soak?
