What's your favorite stitch pattern?

I am about to make a messenger bag and I tried the trinity stitch and although I liked the stitch and it looks good, I am having trouble with it and am losing a little bit of width here and there and I don't want to have to worry about it constantly like that, kwim?
The pattern states that you can substitute your favorite stitch so I am looking for one since I don't have a favorite right now.
I am looking for something that is carefree and looks good :-)

I adore linen stitch. With a messenger bag, you really want something that's dense that won't stretch and distort from the weight of the stuff in the bag, so I'd go for something like linen stitch that will keep it from stretching too much.

What yarn? I like linen stitch, but a whole bag in it would drive me cuckoo. The trinity stitch will likely behave itself when you block it, but otherwise I'd think about maybe a seed stitch or double seed stitch?
