Coconut milk yogurt help, please

I mixed 2 cans coconut milk with 1 capsule probiotic. It didn't work.

Not enough probiotic??? Or what?

I've never even made the stuff so I'm not the expert here but you can't make yogurt with probiotics, you have to buy special dairy-free yogurt starter and follow the full protocol of cooking and letting it sit out for a certain number of hours. I'm almost certain Kathy has the recipe/directions up on her blog and someone will tell you where to buy the starter (sorry, I don't know).

When I made a cultured coconut milk product (from probiotic caps instead of a real yogurt starter) I think I used more than just 1, maybe 3 or 4? But it had an odd sulfur-y smell, I didn't care for it, although the flavor seemed pretty much right. I haven't gone back to it, but if I did, I'd follow Kathy's recipe including the brand of dairy-free starter she recommends. We like fermented vegetables enough that I haven't felt the need to do coconut yogurt.

When I did it we used a yogurt starter and either pomonas' pectin or gelatin added to thicken it. Oh, and a tsp of raw honey to feed the flora :. Otherwise it was drinkable, which I liked but the kiddos, not so much! HTH!

Okay. So maybe it actually did work, but it made cultured coconut milk rather than yogurt. I didn't actually taste it. I was scared off by the consistency.

I've heard from a few people that you could use probiotics. Guess that wasn't really the whole story. I was so excited to get started I didn't want to wait to order something and have it shipped.

Thanks for setting me straight.

FWIW, I've heard that from a few people as well but never had the guts to try it after hanging out on this board.

You can, but it won't have a yogurt consistency unless it contains the 2 strains that are used to make yogurt:

Lactobacillus bulgaricus

Streptococcus thermophilus
