Gluten/wheat reaction? And popcorn

I've been on a TED since October, and feel tons better.

I've slowly been trying to add foods back in, with little luck. I know I have many, many food sensitivities, and probably have severely damaged my gut over decades of eating them anyway. But part of that is because there is so very little that seems to be okay to eat.

Yesterday I had some bread after being wheat/gluten free for over 3 months. I felt fine afterwards and didn't have the typical reactions that I usually show when reacting to a food trial (e.g. rapid heartrate, palpitations, agitated mood, stomach upset).

But last night I woke up with a really bad headache. I never get headaches like that. I sometimes get sinus headaches, but this one was different. Could it have been a reaction to wheat or gluten, even though it had been over 12 hours since I ate the wheat?

Also, I definitely react to corn products, especially corn syrup. But I've been eating popcorn lately with no apparent reaction. Has anyone had experience with having a corn sensitivity but being able to eat popcorn?

I can't respond to the corn questions, but I can say that yes, the headache could very well be from the wheat/gluten bread. There are many on this board who have delayed reactions to foods. I believe the timeline for a reaction is up to 4 days later.

I remember reading here at some point that sometimes people do fine with lesser processed corn (fresh, popcorn, even chips/tortillas maybe) but cannot tolerate the really messed-with corn such as hidden ingredients (citric acid, dextrose, blah, blah - that whole list).

Reactions can start or last for days after consuming so 12 hours could totally be a reaction.

A friend of mine in college couldn't tolerate corn syrup but could have plain corn with no problems.
