pasta question

has anyone tried to make homemade pasta? i found a few recipes all of which call for eggs. i also can not use regular flower because my son is allergic to wheat. i was looking for any suggestions on which flour would work best and if anyone has tried making pasta and omitting the eggs.

I have not personally tried it (yet - on the to do list, but waaaaay down), but buckwheat sounds like your best bet. i can make rolled out buckwheat tortillas, so I imagine i could make linguine from the same dough pretty easily. just VERRRRRRY time consuming.

do you think you could make quinoa pasta like in the stores?

I tried to make a pasta-like dough for pieroghi. It was very fragile so didn't work how I'd intended. I then just cut it up and made "pasta" from it, which ds1 said was great but it still fell apart very easily while rolling and transferring to the pot- even using xanthan gum. I haven't had a chance to try again since then but I do intend to at some point.

Here's what I used, if you want to try to modify it somehow or something (maybe it would work better using a shortening and cooling it before rolling?):

1 1/4 c rice flour
1/4 c sweet (aka "glutenous") rice flour
1/4 c tapioca starch
1 t xanthan
2 T sugar
1/2 t salt
1 t baking powder
2 T oil
3/4 c water (can't remember if I used all of the water)

My totally lazy way out is to buy Tinkyada or Trader Joe's rice pasta We did try making raviolis with rice papers. It worked, but they were fragile and time consuming.

SO glad you mentioned TJ's rice pasta. I had no idea they had their own and we went to the city that has a TJ's today so I picked some up. It's the same price for their brand as it is for the name brands here on sale. Thanks!

I wish I could take the easy way out! We are allergic to rice too tho, anything used in any type of premade "allergen free" food really, so we are really having tons of fun trying to be creative with foods.

Oh no! I'm sorry Can you do corn? I know kbrown92 eats a corn pasta. I think I've seen tapioca noodles at the Asian food store, though they might have contained cornstarch, I can't remember. Oh, but I did buy some spring roll wraps (they were round) made of tapioca and water only. I haven't used them yet, but they're thin and brittle, so you have to soak them in hot water for a minute. Maybe that would work if you cut them into strips just after soaking.

Yes, I've seen the tapioca noodles and mung bean noodles (not sure if those would help) at the Asian market.
I find the spring roll wraps very fragile. They rip easily (imo, but I have big ham fists and no coordination ).

ugh, nope. no corn either! I will look for some tapioca stuff tho! Thanks!

you can buy 100% buckwheat noodles, but if memory serves, they were $6 for 1/2lb...

i actually found this yesterday! can't wait to give them a try!
they were about that much too tho, but my son doesn't each much at a time so they should last a bit.
