I keep my brown rice bread in the freezer after I buy it until the day before I use it when I put it in the refrigerator. After it dethaws a bit the peices come apart naturally. I then make sure to use it within a few days.
Unless you make french toast you will need to do something with it to make the consistency better. I don't have a toaster so I put it under the broiler in my countertop oven. Either method works.
FWIW, I personally don't like GF bread. We make A LOT of french toast because it seems to be the only thing I like with it. Maybe it's my years of eating wheat bread. The kidlets don't seem to mind eating a sandwich made out of it but to me I equate it with eating cardboard. I have tried making my own bread but at high elevation I can't seem to do it. When I do visit people at normal elevations I make my bread and it's much better.

I use the brown rice bread for my dd. I always keep mine in the freezer. When I want a piece I take a knife and stick it in between the slices to separate them. I have never had a piece break, the slices always break apart from each other perfectly. Then I wrap it in a little cloth rag (I guess you could use a paper towel) and then pop it in the microwave for 30 seconds. It always comes out perfect.
This bread is really tasty for non wheat bread, imo.

I break the loaf in half (or thirds) and keep part on the counter (in a plastic bag) and the rest in the freezer. You need to use it within a few days, so estimate what you'll need and leave the rest frozen. The stuff is pretty dry unless you toast it.
I have tried to break it frozen with a knife as ppost recommended, but it is difficult.

Yeah the knife trick didnt work out too well, i just ended up with a cut and 1/2 the loaf on the floor. LOL!

I have used Food for Life, Kinnickinick, and Ener-G. Ener-G is not frozen and actually is my favorite. Bob's Red Mill makes a nice GF bread mix. They have several kinds. But we are high altitude and I can't seem to get any GF to bake well up here. The bread of those brands is GF, casein free, and soy free to my knowledge (read the ingredients though).
Edit: I have Kinnickinick and Ener-G on hand if anyone wants to ask an ingredient question

: Totally feeling your pain. 
We use food for life brown rice bread. There's one at whole foods that lives on the shelf...but it is like eating a white sponge if you ask me. None of them are wonderful.

The Ener-G Tapioca loaf I have has Guar Gum. I don't know about other corn based products since that isn't an intolerance in our family. I just happened to notice it was guar and not xantham gum.
