Don't have time to search for recipe on MDC....help? Pretty please?

I know there was just a buckwheat discussion very recently (I guess it was CS's muffins) but I am wondering if there is a buckwheat pancake/waffle recipe anywhere that allows for eggs and even ghee? I could do buckwheat, eggs, baking soda/powder, vanilla, shortening/ghee....a little more flexibility than some so I'm hoping there is a delicious recipe somewhere in the archives that someone maybe can easily point out to me. TIA.

I know Kathy's blog has one, but I don't know what's in it.

I would probably just get a generic waffle recipe from a cookbook or online, and just substitute the milk with water. I'm not sure you would even need to substitute anything else, with your restrictions.

Hmmmm....not even the need to add a "gum"? I guess I should just try something and stop bummin' around.

I don't think so... I can't think of what 'gum' is in a regular waffle recipe (although I admit it's been a long time since I made real waffles. )

If you can do eggs than you have zero need for "gum". Especially with buckwheat which is more "sticky" than other GF grains. At least, in my experience, standard disclaimer, etc.

Google to the rescue! (ETA: I searched for "GF Buckwheat waffles" - there are probably more good ones in the results.)

Sift dry ingredients together, beat egg yolks add milk and melted butter, combine and stir quickly, fold in whites and add milk if necessary to make batter thin enough to pour. Omit sugar for very crisp waffles. Makes 6 waffles.

Thanks all. I always think anything without gluten needs a gum to make the flour act similarly but I've only baked GF a few times so I don't know what I'm doing. It's really annoying actually. I used to be a great cook/baker and now I feel like I can hardly get a decent meal on the table once a week or something.

Oh happy day!! I just made THE MOST DELICIOUS pancakes. I mean, I prefer these to any gluten flour pancakes I've ever had. I seriously adapted a recipe I found so I can post it - it's mine.

I realize many of you would have to eliminate or sub some of what I used but I will just post what I did exactly.

1 C. buckwheat flour
1 Tb. agave nectar
a little salt (maybe 1/8 tsp.)
1 egg
3/4 C. coconut milk
1/4 C. water
1 Tb. ghee plus 1 Tb. palm shortening melted together
splash of vanilla
few shakes of nutmeg
Mix it all up and cook away. Yum!!!!

I was SO excited to give these to DD and she literally wouldn't put them in her mouth. She's never had any sort of bread product so it kind of weirded her out I guess. Hopefully she'll come around soon because I know she'll love them. (Oh - I don't like syrup so we put a little homemade raspberry jam on top).

Just a note that I made pancakes with this recipe, not waffles.

I forgot the Tsp. of baking powder in the recipe. Sorry!
