Help! What do I do with this rabbit meat?

I've put some rabbit meat in the crockpot with just water and sea salt. I'm used to breading it and frying it like southern fried chicken, but that's not really TF with the white flour and all. Now, I'm freaking out, because I don't know how to prepare it for dinner tonight. Here is what I was thinking. It's like a cross in taste between chicken and pork being on the darker side meatwise.

1. Make a rabbit and roasted potato casserole by cutting the potatoes and baking it all in a casserole dish with olive oil, garlic, onion, broccoli, and herbs like oregano and basil.

2. Make a egg noodle dish (not really TF either, but I've had egg noodles sitting around forever) with chicken stock, red peppers, mushrooms. Not sure how that would taste at all.

I hope I haven't wasted this meat. Any other suggestions?

How about adding onion, celery and pepper (maybe carrots or mushrooms too) and serve over a bed of rice?

I made a rabbit stew last weekend that was fabulous - I poached the bunny at a bare simmer for an hour or so in seasoned water with onion, carrots, celery and bay leaves. Then when it was tender I took all the meat off the bones, put the bones back into the poaching water and reduced it until the salt level was right for a stew. Then I strained the poaching liquid, put it aside, and sauteed some more onions & carrots, added some thyme, some rehydrated morel mushrooms, and the meat and the liquid. Then I let it bubble away and reduce some more, added some cream and reduced that a bit, and then it was deeeelicious. I took it to a potluck and it vanished in about 10 minutes.
