Can I soak with lime instead of lemon?

Can't do dairy. Only have limes on hand.

Any acid should work fine, from a phytic acid standpoint- lemon juice, lime juice, vinegar, tomato juice, ascorbic acid powder, etc. Obviously, ascorbic acid powder is pretty "un natural and un-traditional" and the tomato flavor would only work in certain recipes. Lemons and limes can be substituted for one another in almost any application.
