Need quick gluten-free help!

I've very recently began a GF diet, and I have to go back to work tomorrow and realized I'm kind of stuck on what to bring. My old choice was usually a sandwich or a frozen meal.

I don't really have any meals cooked, so I can't take leftovers, and don't have a lot of time today to prepare a meal, so what would be a quick solution for this week, until I have time to actually prepare and plan some meals?

For tomorrow, I was thinking of just making some chicken tonight and taking that tomorrow, with an apple or something. Any other ideas?

Might try here

When in doubt, we do salads. We keep a big bucket of organic greens in the fridge, and you can just throw whatever on top. Diced apples with walnut and vinaigrette on top is delicious. GF deli meat and cheese on top. Grilled chicken diced on top with a boiled egg. baked potatoes with toppings. rice and beans. tuna salad. Nachos.

-gf tortilla wrap with sandwich type stuff in it.
-gf spagetti-reheated.
-throw soup ingredients in crock pot in morning, will be ready when you get home and use for next morning.
-can you make bread for sandwiches, faster if you have bread machine.
-reheated rice
-cottage cheese and fruit tray
-beef jerky and cheese and fruit

It all depends on preferences and other allergies

for this week I would suggest spiced rice dishes, with any veggies/chicken you have on hand -- you can either go mexican or asian (check soy sauce for gluten though) depending. Fruit w/nut butters, salads.. There are also some GF snack bars that are easy to pick up in the vacinity of an office these days - larabar for example

What DS and I eat, a lot of it I get at a natural foods store:

GF soup with GF crackers and/or cheese (Amy's and Health Valley, check label)
Corn tortilla wrap with meat/cheese and GF dressing
Rice crust pizza
GF bread (toasted, grill cheese, french toast)
yogurt
chicken or other meat dishes
crock pot stews (pot roast, potatoes)
sweet potatoes
raw or cooked veggies
fruit
GF cereal (yeah, not very nutritious I know)
Cooked rice (you can make a fried rice or spanish rice if you like that) Minute Rice sells an instant brown rice
Rice pasta with sauce

I am on a monthly recipe list and all recipes are GF. Some of the recipes ingredients are too exotic for me (but I am a picky eater) you should check it out. You get a lot of recipes per month:

Amy's has some frozen meals which are GF. I find them at Fred Meyer's in the frozen vegan/organic/health food section.

rice cakes with peanut butter and honey
corn tortillas with scrambled eggs in them (reheated)
microwave popcorn is a good snack
chicken and gravy over rice or potatoes
black beans and rice
chicken marsala
chicken mirabella
pork & kraut
yogurt
fruit
cut up vegetables with hummus
