Namaste Muffin Mix add ins?

I bought some today, craving blueberry muffins. We are non IgE to milk/soy. It calls for 1/2 c oil, what kind of oil? Can I use coconut oil?

Just want to say don't get your hopes up for really great muffins. Don't scrimp on a sweetner.

any suggestions for add ins to improve on the mix?

Not sure. I've made them twice. The first time I used fruit juice instead of the water, thinking that would also make them sweet. I think I didn't realize they have absolutely NO sugar in them to begin with (I think that is true). The texture was actually not too bad, but they were really not sweet at all. The next time I made them the texture was really really off. I haven't tried again.

I don't see why you couldn't use coconut oil.

good luck, let me know how they turn out! Sometimes when you've been deprived for a long time the plainest stuff seems wonderful.

I've used Spectrum shortening for their cupcake mix. I've only had that one item of theirs, but it was actually really tasty!

I've only had their brownies (which are heavenly btw), and I think I just melted some palm shortening.

ETA: No, I remember- at that time I was still using safflower oil. But either one would be good.

Their brownies, and their blondies, are great! The muffins just left something to be desired though.

Did you add anything in? Choc Chips? Blueberries? Do you think coconut oil woulkd work? Should I use 1/2 OJ and 1/2 water for the water mix? Add in agave?
I'm no baker so I'm in need of help! I want a yummy muffin.
