Pappashop (or similar) product attributes

I am carrying Fuzzi Bunz. There are 4 sizes (well more but in my first order) and 21 colors, but not all colors come in all sizes.

How do I set up attributes so that when people click "order" it just puts exactly one item in the cart, and only if it is actually in stock and available?

Am I making any sense?

Have you checked with Pappashop support? Do they have an online manual that you can read to figure out how to setup the options?
