I have an ellaroo mei tai, too. I agree back carries don't work so well when your LO falls asleep. I usually use my Beco Butterfly with the sleeping hood, my Toddlerhawk with the headrest up or my AMC II with the body un-snapped for head support. Also, I have an Ergo on the way that has a hood attached and am hoping we like that.
I think you just need to look for a mei tai or structured carrier with some time of head support if you baby falls asleep often.

I loved the Ergo for walking naps. The hood can be pulled up to keep a rolling head in place, and it's easy to sit down on the edge of the bed, lean back carefully, and undo the straps. (I did that many, many times with DS when he was younger. He would usually nap for a couple of hours like that.)

Just wanted to add that if you like using a wrap or mei tai for back carries, and your little one falls asleep, you can use a small length of cloth to wrap over the upper body/head to keep them from flopping about. I didn't realize this trick until my ds was well over a year old:P I saw an african woman(in a book) utilizing this and thought it was brilliant! Just wrap around baby and tie above your breasts, you can tie it by gathering both ends together or if you prefer you can just tie the top 'rails' of the material and let the rest hang down. I hope this makes sense!
